Hemp Seed Cookie Recipe

 

Looking to make some delicious treats but want to stay healthy? We have just the right recipe for you. The best part is you won’t even have to cook anything! These hemp seed cookies make a great after lunch or dinner treat to finish off a nice meal. Feel free to alter the recipe to your liking. Get creative and add your favorite items to take things up to the next level.

Ingredients Needed

  • 3/4 cup almond milk - or any type of milk

  • 2 teaspoons pure vanilla extract

  • 3/4 cup coconut oil unrefined/virgin

  • 2 cups rolled oats

  • 1/2 cup cashew butter - or any nut or seed butter

  • 1/4 cup cacao powder

  • 1 cup hemp seeds or ground hemp hearts (Purchase Hemp Seeds or Hemp Hearts at our store!)

  • 1.5 cup coconut sugar

Instructions

  • In your preferred pot over medium heat, whisk together the almond milk, coconut sugar, coconut oil, and cacao powder. Stir occasionally and let the mixture warm up until it just comes to a simmer. The coconut sugar should be fully dissolved. Make sure there are no solid pieces in the mixture.

  • Remove from the heat. Stir in the vanilla, cashew butter, rolled oats, and hemp seeds or hemp hearts until fully incorporated.

  • Using a spoon or a cookie scoop, dollop the mixture into your perfect cookie size onto a parchment-lined baking sheet. You could also spread the mixture onto a parchment-lined baking sheet and cut into equal squares.

  • Place into the refrigerator for 2 hours or until the cookies are set.

  • Store in a container in the fridge.

  • Enjoy your healthy hemp seed cookies.
